Ingredients

3.5kg potatoes

3.5kg Country Range Fish Pie Mix

700g cut leeks

300g Country Range Butter

250g Country Range Plain Flour

500 ml cheese sauce (mixed as instructed)

4 pinches parsley

3 pints whole milk

1 squirt! Country Range Lemon Juice

Instructions

Melt 250g butter in pan, add cut leeks and cook until soft.

Add plain flour to make a roux then slowly add milk until consistency become a sauce.

Add fish pie mix and cook for 20 minutes.

Add cheese sauce, parsley and lemon juice.

In another pan, boil potatoes till soft then mash with 50g butter.

Put pie mix into individual dishes or into one big dish if preferred.

Top with the mashed potato, fork the mash to make small peaks then put in oven for 30 minutes Gas Mark 5.

Garnish with a slice of lemon and sprig parsley.
