Ingredients

Chocolate Brownie 

200g Country Range 70% Dark Chocolate Drops

4oz Country Range Unsalted Butter

9oz caster sugar

4 free range eggs

1 drop vanilla essence

60g Country Range Plain Flour

60g Country Range Cocoa Powder

 

Peppered Summer Berries

3oz mixed berries (strawberry, raspberry, blueberry)

6oz stock syrup

1 tbsp Country Range Cracked Black Pepper

 

White Chocolate Pannacotta

2 Country Range Gelatine Leaves

175ml milk

600ml double cream

75g sugar

1 Country Range Vanilla Pod

100g Country Range White Chocolate Drops

Heat the oven to 180ÂșC.

Melt chocolate in a bowl of hot water.

Beat together butter and sugar then gradually beat in eggs and vanilla.

Mix the cooled chocolate into the egg mix.

Fold in flour and cocoa powder.

Toast pistachios and chop finely and fold into the mixture.

Pour the mixture into a buttered tin and bake for 20 minutes or to firm to touch.

For the berries, bring up to boil stock syrup and simmer.

Add the cracked black pepper and simmer for approximately 3 minutes.

Leave to cool and strain most of the pepper out.

Rinse the mixed berries and place in the peppered liquid and allow to cool.

For the panna cotta, slowly bring milk, cream, sugar and vanilla to simmer.

Soak gelatine leaves in cold water until soft.

Add white chocolate to the milk and cream mixture until totally melted.

Add softened gelatine leaves, whisk together and pass into desired moulds and chill for a minimum of 5 hours.
