Ingredients

  • Anglaise 500g
  • Pistachio 60g
  • Leaf gelatine 12g
  • White Chocolate 230g
  • Whipping Cream 600g

Make a sauce anglaise.

Whilst sauce anglaise is hot add soaked and drained gelatin, make sure that this is fully incorporated before the next stage.

Use a whisk to mix in the Pistachio paste, make sure this is mixed in well.
